The Old Ginseng Guai can be found in Chapter Three, just right of the Towers of Karma Keeper's Shrine in the Valley of Ecstasy zone. To get there, follow one of the downhill paths on the left leading from the Forest of Felicity Keeper's Shrine.

After arriving at the Towers of Karma, head right until you reach a clearing filled with Aged Ginseng. Interacting with the one in the center will initiate the Old Ginseng Guai boss fight.
