Best Dex Build Weapons
You want to be quick, deadly, and nimble. These are two of the best weapons for Dexterity builds in Demon's Souls:

Even if you haven't played Demon's Souls before, odds are you have heard of the Falchion. This is a fantastic weapon to grab early, and you can realistically stick with it through most of the game. It takes a minimum of 10 Dexterity and nine Endurance to wield and can be picked up almost right away in the first level of the Shrine of Storms, Island's Edge. The only real threat to picking it up is the black skeleton guarding it, but if you're quick enough, you can dodge around him and grab it without having to fight him.

For a somewhat higher-level dexterity option, the Uchigatana is a fan favorite that has shown up in a number of Souls games. It takes 13 Dexterity and 18 Strength, and you will have to beat the Vanguard Demon in the Shrine of Storms before you can reach it - so you'll have to make sure you're prepared for that challenge first.

If you want something big and beefy to slam around, look no further than the Great Club. This giant hammer can crush through most enemies' guard and deal a ton of damage, assuming you can land that hit, of course. You need to level up your Strength to 20 before you can handle this beast. While it has just a smidgen less base physical attack than the Great Club, it has better Strength scaling, plus some Dexterity scaling on top of that. You'll need Blacksmith Ed to transform either a base level Club or Great Club, plus six Mace, Pickaxe, Morning Star, Iron knuckles, or Mirdan Hammer into the Cleaver along with the 🌠Swollen Demon Soul.
Best Magic Weapons
Catalysts are not very abundant in Demon's Souls. Instead, the different spells themselves will be the major factor in your damage. Here are two of the best weapons for Magic builds in Demon's Souls:

However you plan on using it, the infamous Lava Bow is very tricky to get but by far the most worth it. In addition to a Hard Demon Soul, Ed will need a plus seven Short bow, Long Bow, Compound Short Bow, or Compound Long Bow. And yes, plus seven only. You'll need 21 Strength and 16 Dexterity to even make use of it once you get it.

If the high damage of the crossbow is more appealing, hold out for the Gargoyle Crossbow. The base damage again might seem low, but it is the only scaling crossbow in the game. You'll need 12 Strength and 16 Magic to wield it, Magic also being the stat it scales with. You can pick this weapon up as a drop from, you guessed it, the Gargoyles in Upper Latria.

Picking the best weapon in a Souls game is never going to be definitive, as playstyles are important. Your character, stats, and even taste will all play a factor. That said, the Northern Regalia, purelyꦅ from base stats, is considered to be one of the best there is. Not only does this sword take 20 Strength, 14 Dexterity, 12 Magic, and 12 Faith to hold, but scales with your world tendency instead of any stat.
Don't get too excited, though, because you need to first get the False King Demon Soul by killing Old King Allant. If you don't know, he's the final boss of the Boletarian Palace Archstone and easily the hardest boss in the game. This is basically a bonus you can grab for fun before starting the game over on New Game Plus.
