You don't need to dramatically alter her stats, but adding a few points here or there, or even boosting her health a bit, would be a great start to letting Tiamat live up to her status as a goddess.
7 Alter Her Attacks 🍃
Whether you're adding flair to the attack or altering how they interact with each other or players, changing up Tiamat's attacks a bit can help to add a bit of personalization and nuance to the final fight. You can mechanically alter them to make them more dangerous, such as changing Tiamat's bite attack to a bite and throw, or even give a bit more anxiety by trapping them in her mouth.
Tiamat is Gargantuan, so it's not out of the realm of possibility that she could temporarily trap a character in one of her mouths, giving them only a set period of time to escape before she uses a legendary attack. Alternatively, you can consider how her legendary actions would mix with each other and affect the environment.
Were you to use her Cold Breath and Fire Breath attacks at the same time it would cause a drastic shift in temperature in the same area which could cause temporary rainfall or even a little bit of hail - both of which would p♋robably make the environment a bit more hazardous to traverse quickly.

Prior to the final fight, consider using Tiamat's human form to interact with the players so she can get a feeling for what she might eventually be facing. Perhaps, instead of trying to flesh out the competition, Tiamat is instead trying to send your players down the wrong path.
If she can stop them before they reach her, why wouldn't she at least try to attempt it?
Assuming that your players don't figure out who she is, her humanoid form also might be a great way to lure them into traps or to inadvertently help her accomplish her goals. Make her into a beloved NPC and then rip that away from your players with the most heart-wrenching betrayal you can conjure up.
4 Keep Track Of He🐠r Abilities
Tiaꦜmat has a lot of active and passive abilities, which may make her very hard to manage in the heat of the moment. Some of her abilities are incredibly important to keep track of♚, such as her health regeneration, while others (such as her innate magic) you might be able to get away with forgetting.
It would be worthwhile to run through a simulated fight against Tiamat by yourself to see if there's anything you need to focus on or that you'll need a reminder to remember.
3 ဣ Let Your Players Weaken Her
If your players are fairly well-balanced and aren't overpowered then it might be worthwhile to let players take efforts prior to the final battle to weaken Tiamat, doubly so if you've boosted her stats at all. 2 Divide Her Health Between Heads ♎
Instead of requiring that your players take out all of her health before any of the heads go down, split Tiamat's health between her different heads. This allows players to see that they're making some genuine progress in their fight against Tiamat and not become discouraged if it's taking a while.
Of course, because Tiamat has a Health Regeneration ability if your players can't take her out fast enough perhaps she slowly begins to regenerate health and, eventually, one can come back with only a handful of hit points. Taking out individual heads can also give players a break from particularly daunting legendary abilities.

If you find that your party is tougher than you expected and Tiamat is having a hard time holding on or needs a break consider calling in some backup. Whether it's her consorts, worshipers, or minions is totally up to you as the Dungeon Master.
This can help to change up the fight a bit and give Tiamat some time to recover if your players are distracted enough. Of course, this also hinges on the fact that your players didn't eliminate all of her backup options before going into the final fight.
Tiamat is tricky, however, so you better double-check that they truly blocked off all of her options.
