Dendro (i.e: grass) is Genshin's seventh, mostly non-existent, element that can only be triggered by a handful of enemies.
For now, dendro samachurls are one of a few units wielding this variety of magic. Their spells only react with pyro, causing the "burning" reaction, the same as when pyro attacks ignite long grass. It's unknown when they'll become playable, but and mischievous kindergartener, Yao Yao, are expected to be the first dendro characters. Once the dendro heroes are introduced, the number of possible weapon combinations will increase to 35.
6 Geo And Bow 𝔉
Geo + bow is the first missing weapon-element combo among the elements that currently exist in the game but it shouldn't be. Here us out here. In an alternate universe, Zhongli could have been a compelling geo bow user; one who fights like Tartaglia and doesn't actually use a bow, the same way that Ningguang doesn't use her catalyst. Genshin's lore says that Zhongli created Liyue's Zhangjiajie-inspired mountains by throwing earthen javelins at demons. For that reason, Zhongli having a polearm makes sense, but he never actually throws any projectiles.
Zhongli is exceptionally strong right now, no one should argue otherwise - and this point is not to suggest that Tartaglia should be replaced - but aiming like an archer to hurl stone harpoons, while being able to activate a melee stance, would give Zhongli an extremely dynamic playstyle. Cryo catalyst is the most obvious unfilled role in Genshin's character roster. Ironically, since pyro units can already access the formidable melt and vaporize reactions, any attempt to intrᩚᩚᩚᩚᩚᩚᩚᩚᩚ𒀱ᩚᩚᩚoduce a strong, main-DPS cryo or hydro catalyst (Mona is often thought of as support), would only further buff those pyro characters.
Pyro has long been viewed as the best element, and melt teams are still dominant, even if the recent electro and anemo buffs helped even the playing field for every team composition. Some anemo teams are built to maximize the number of melt reactions they can trigger. Would another cryo damage dealer, who triggers melt endlessly, just further perpetuate the popularity of Diluc, Klee, Hu Tao, and Ganyu in co-op games? Time will tell. Next to Genshin's flowing, quick-striking, hydro damage dealers a hydro claymore user would look out of place... which is all the more reason to introduce a few of them to the playable character list. Mona sprints faster than any other character. Xingqui and Tartaglia attack with blinding speed. Meanwhile, Barbara is almost never used offensively.
This means Genshin is entirely lacking a heavy-hitting, lumbering, hydro DPS. If it worked for electro characters like Razor and Beidou it can work for hydro too. Anime fans, a demographic inclusive of many Genshin fans, don't have to search very far to find examples of how a hydro claymore character could look - think Kisame, Zabuza, or Suigetsu from Naruto. Sadly, there aren't any suspected hydro claymores to look forward to at the moment.

2 Electro Polearm 🐻
Although Mihoyo is yet to officially announce any upcoming electro polearm characters, with the addition of Inazuma, home of the Electro Archon, it seems all but certain that this roster gap will be closed before long. The weapon of the Electro Archon, Baal, was unknown until recently. With Genshin's latest trailer, however, the vengeful goddess is shown summoning her sparking katana.
With this role already fulfilled by Keqing, giving Baal a sword feels like a missed opportunity, but considering the popularity of spears in Inazuma's warring factions, it's only a matter of time before someone picks one up and steals back an electro vision. Perhaps that someone will be Yae Miko?

Polearm characters were the most neglected when Genshin launched. Xiangling was the only fighter in this class until December 2020. Since then, Zhongli, Xaio, and Rosaria have added to the elemental diversity of polearm units, but a hydro polearm user is still missing. When this character could be added is anyone's guess.
Again, spears are exceedingly common in Inazuma, but the only upcoming hydro chara🐲cter is Kokomi. Kokomi looks so much like the previously leaked catalyst-wielder Mimi that it seems certain that the latter has simply been repurposed as the former.
